My scrambled eggs suck! Help me.

    Fast Egg Sandwich

    Toss two pieces of bread with your favorite cheese in the toaster oven. Turn it on.

    While the toast is toasting... crack two eggs in a Tupperware container about the size of a piece of toast. Add your milk, salt and pepper. Put the top on. Shake the heck out of it (scrambled). Throw it in the microwave for approx. 2 min.

    The toast and eggs should come out about the same time. Dump the eggs on the toast. Douse liberally with hot sauce and your in business. Breakfast in two minutes. One dirty dish. Two if you want to be civilized and use a plate.

    I've never had an issue with making scrambled eggs...I just whip a couple of eggs and about a tablespoon of milk in a bowl with a fork. Then get a pan hot, butter it, and dump the eggs in, constantly scraping cooked egg off the bottom of the pan until it is all cooked just enough to look a bit shiny, but not wet. Then dump the eggs on a plate, let rest for a few minutes, and serve with some salsa and a slice of ham or Canadian bacon.

    OMFG...I must try this.

    The first thing to do is cook eggs, no matter the type, over low heat. The second is to add spices to give them flavor. Salt & pepper is a must. Cheese is always good, you choose the type. Nutmeg adds a little something that no one ever dislikes. Butter is always a hit. And you can add sour cream, milk, or little water to add a something to them.

    By the way, any guy that used the word "whisk", you are not a man. Go ahead and turn in your mtn bike for a roadie and cut off your boys with a dull, rusty butter knife.

    Binh cooked up a huge batch of perfectly scrambled eggs in camp yesterday morning. Should've camped and ridden with us in Kernville, he coulda given you lessons!

    Or the pan. Either way, it doesn't do anything for the appearance of his BEST fluffy scrambled eggs.

    btw- if i'm just making scrambled eggs for myself, i use the microwave. they're not quite as good, but there's less/easier cleanup. and i put tapatio on them anyway, so i don't really care how fluffy they are.

    Use a wisk not a fork. A wisk gets more air in them.

    Make sure pan is up to heat. Low heat is only for over-easy eggs.

    Add a bit of milk, cream or water, mix thoroughly. For really fluffy, mix in the blender just before you pour into pan.

    Stir vigorously with chopsticks until desire consistency.

    Garnish and serve.

    I just found out (literally 30 seconds ago) that using a whisk while the eggs are in the pan (rather than a spatula) makes eggs that are ridiculously fluffy and delicious. Once I started to see that the eggs were holding their shape, but still a bit undercooked, I let it sit on the stove until they were done and used a spatula to get them out. Pair that with some salsa and canadian bacon and BAM excellent breakfast :D

    Make hard-boiled eggs. Easier to take with you on the road anyway. I've found that they're eGGcellent trail food too. ;)

    Oh Nice! So Nice!

    I had a victory this morning.
    Went with Canadian Bacon first...set aside.
    Three eggs with a table spoon of cream.
    Forked it up as good as I could before I poured onto a medium heat non-stick pan.
    Used the center pull spatula technique (as shown in video).

    They came out great! added some cheese and chile verde and enjoyed...

    I just bought 12 chickens this weekend and can't wait for fresh eggs. Next an the agenda is a milking cow and a few sheep....
